  1. These are beautiful! For those asking, conchas are a Mexican sweet bread named for the pretty pattern you see on top (concha means seashell, except in Argentina lol).

    I used to buy these in my hometown in Wisconsin for 65 cents from the local panaderia and bring them to my great grandpa for breakfast in the summer. Thanks for the trip down memory lane!

  2. Dough

    Bread flour  377 grams

    Eggs 113 grams

    Water 113 grams

    Shortening 19 grams

    Instant yeast 15 grams

    Sugar 76 grams

    Salt 7 grams

    Pasta de dulce (topping)

    All purpose flour 125 grams

    Shortening 84 grams

    Powdered sugar 84 grams

    In your mixing bowl soften the yeast with the water. Add flour and shortening, let mix until it comes together. Add in your eggs one at a time. For the sugar add gradually by sprinkling in while the dough mixes.

    Let dough proof until double in size.

    For the topping, mix all ingredients together until combined. You can add more flour if too soft or add more shortening if it is too dry. (You want a butter cookie consistency.) Cover and set aside.

    When dough has risen, punch down to release the gas. Then portion into desired size.

    Be sure to grease the tops of dough before adding the topping or they won’t stick. Grab some topping and flatten into a disk to cover the top of dough.

    Cut topping in desired shape being careful to not cut through to the dough.

    Proof until doubled in size. Bake at 350 F for 15-18 mins.
